Is there a way in motion to make the logo fall apart or fly apart into different parts to create a logo >
there is something similar in this video. It doesn't have to be described in as much detail as in this video.

It's easy. If the logo was created in photoshop, you just import all the layers.

The best way to create such effects is to use Cinema 4D. This application offers much more editing and detailed texture creation possibilities than Illustrator. You create a logo in Photoshop, transfer the work to Cinema 4D, and create a 3D model. Then you add effects to your taste (you can download presets from the Internet), and the logo is ready. I always use this method. When I'm too lazy to make something up, I go to https://www.namecheap.com/guru-guides/logo-design-cost/ and create a logo from ready-made layouts. That is also a very convenient way, especially for beginners.
