Using browser-based conversion tools can definitely help maintain privacy since files are processed locally on your machine rather than sent to a server. I've tried ApexDoc for converting my bank statement PDFs, and it's pretty straightforward. It processes files right in the browser, keeping everything secure on your end. It could be a good solution if privacy is a primary concern for you.
